Creamy cauliflower soup

List of ingredients
1 teaspoon of olive oil
1 large onion, chopped
4 cloves of garlic, finely chopped
1 large cauliflower (cut into florets)
1 cup raw cashews
1 teaspoon of natural salt
1/4 teaspoon white pepper (black also works if not available)
4 cups of water or vegan broth
1/2 lemon squeezed

Preparation:
Heat the oil in a large pot, add the onion and garlic, cook for 2-3 minutes. Add cauliflower and cashews, salt and pepper, then cover with water / broth. Bring to a boil, simmer until cauliflower softens, about 15 minutes. Turn off the heat, add the lemon juice and mix well.
