Ricotta wraps

These delicious confections can be filled in different ways, for example with peppers, onions, cucumbers, gherkins, radishes, smoked salmon, turkey or chicken breast, etc. They can also be transported easily and are therefore also suitable for use on the go - just wrap them in cling film and take them with you. If it goes particularly fast, you can also buy wraps and just fill them.

List of ingredients (4 people)
For pasta:
250 g of flour (wholemeal flour / kamut flour according to taste, ........)
1/2 teaspoon of salt
2 tablespoons of rapeseed oil
1 dl of water
For the stuffing:
2 cobs of corn
lots of water (sugared), boiling
400 g of ricotta
2 large salad tomato (s)
1 bunch of chopped chives
n. B. chili powder, salt and pepper

Preparation:
For the bands: mix the flour, salt and oil. Add the water gradually until the dough is firm and not too sticky (more or less water is needed, depending on the type of flour).
Put the pasta in a bowl, cover and refrigerate for 2 hours.
During this time, the corn cobs are cooked in sugared water for about 20 minutes until soft; remove the cobs from the water, leave them to cool and then cut the grains come.
When the two hours of cooling are almost over, the tomatoes are sown and cut into cubes (if you want, you can peel them first).
In a bowl, mix the ricotta with the corn and tomato cubes, add the chives and season with chilli powder, salt and pepper.
Divide the dough into 4 portions and spread it very thin and rectangular on a well floured surface so that they fit into a rectangular grid. Heat this pan on the stove and fry the flat cakes one after another without fat on both sides, until they throw bubbles, then immediately remove them from the pan, otherwise they become hard. If necessary, cover with aluminum foil and keep in a preheated oven at 50 degrees for a short period of time.
When all the flat cakes have been cooked, distribute the filling in the center of the flat cakes, then roll them up and serve immediately.
