Eggplant pizzas

Ingredient List (2 People)
2 aubergines, approx. 250 g
300 g tomatoes
125 g mozzarella
1 bunch of basil
1 clove of garlic
4 tablespoons of olive oil

Preparation:
Wash and dry the aubergines and remove the ends - cut the aubergines into slices and add salt - wash and drain the tomatoes, then cut them into small pieces, remove the stem.
Wash the basil, shake and chop, set aside a few leaves for decoration - Peel the garlic - Mix the oregano with the olive oil in a bowl - Cut the mozzarella into slices.
Add the tomatoes and basil to the oil mixture - Add the garlic with the garlic press, season with salt and pepper and mix everything together - Place the eggplant slices on a baking sheet lined with parchment paper and spread the tomato mixture.
Pour the mozzarella over the tomatoes and cook the aubergine pizzas in a preheated oven at 175 ° C over low / high heat for 10 - 15 minutes. Remove the aubergine pizzas from the oven and serve with basil leaves.
